BRC Food Safety: Prerequisites Before the Certification Audit

BRC Certificate
The first prerequisite for BRC food safety is to set up the food safety team. An effective food safety system depends on experienced staff beyond the technical group. The team should include representatives from production, engineering, R&D, distribution, procurement, and in many cases human resources. Team size varies with the size and structure of the business. Team members should be:
- Able to interpret the standard's requirements
- Capable of applying the standard in practice
- Oriented toward continual improvement and process development
Senior Management Commitment
Successful BRC implementation requires senior management to be part of the food safety organisation. The management team actively supports the food safety team, sets the resources, and reviews progress against the BRC requirements.
Self-Audit and GMP Review
The operator decides whether the current state of the facility meets the BRC requirements: building, equipment, processes, and documentation. A gap analysis and a self-audit support that decision. An external consultancy can run the pre-audit where an independent view is helpful. The BRC publishes a self-audit checklist as part of its scheme documents, and this checklist is a practical reference for the review.
Documentation Baseline
Before the certification audit, the operator confirms that the documentation baseline is in place: the HACCP plan and its supporting hazard analysis, the quality manual and procedures, records covering at least one full cycle of internal audit, management review, supplier approval, traceability testing, and a mock recall. Missing records are a common reason for non-conformities at Stage 2.
Training
Training records must show that staff in food safety critical roles have been trained against the BRC requirements and against site-specific procedures. Training content, attendance, and effectiveness review all need to be documented.
