Pest Control
The presence of any insect, live or dead, in the operation means the kosher certificate cannot be issued or maintained. This applies not only on the floor but also in production records. It is a zero-tolerance requirement. How pest control is managed also matters.
Production Started Under Rabbinic Oversight
Either the operation's production is performed by a Jewish operator, or the production is started by a Jewish operator. This makes the production blessed in the scheme's terms.
Passover
During the 8-day Passover holiday, leavened foods are not consumed by Jewish consumers. Products intended for Passover go through an additional audit to confirm that the food contains no flour or its derivatives.
Labelling
Products certified as kosher carry defined kosher symbols on the label (the exact symbol depends on the certification agency). The symbols are a visible quality reference that supports product appeal. Label preparation is important: the kosher certification agency supervises the label content, which must be prepared under their oversight.
